A good editor can be the best companion for filmmakers. Simply put, an editor's job is to take everything which was taken in camera for a particular task and put it into the narrative. However, don't fall for the flimsy idea! There's a lot more to editing than splicing 'err' clicking-and-dragging clips into a timeline! A good editor understands what drives the narrative's dramatic elements and decides on which clips will be used to make up the overall.

Pro-tip Be aware of your assets (cast, crew, equipment, time spent in the restaurant of your cousin's father-inlaw's friend's uncle's) in your mind while deciding whether or not to do "just one more" shot of a particular shot. Unless you're offering serious bills it's not necessary to go all David Fincher on the people.
After day (shoot) day the coverage gives you the option to create the most compelling movie you could make. Cutaways can be quick and powerful ways that will help tell your story visually. Planning for both will ultimately help your film become more exciting and engaging for your viewers.
